Raclette du Valais AOP is a cheese made only from raw milk, from small cheese factories in the canton of Valais. It obtained the “Protected Designation of Origin” label in 2007.

Its recipe is protected by well-defined manufacturing specifications. It has not changed since its origins in 1574.
